Book of Miso by William Shurtleff and Akiko Aoyagi

I have merely scratched the surface of this fat little book and already I am a believer. Actually, I've spent most of my time rereading the same pages, the ones that describe the different types of miso that you can buy in North America so I can make informed, low sodium purchases. What I am trying to do is to replace coffee drinking with a daily cup of miso instead - this will provide me with a protein boost at the same time as giving me a healthy dose of natural digestive enzymes (ew! ick!). There are many other perks too - I can cut back on my salt intake by using miso for seasoning instead; more vitamin B12; keeps my diet alkaline; and helps clean toxics from air pollution out of my system.

Well, in the years since this book was first published some of those claims have been debated, but what I do know is that I love the flavour and my digestive system has improved enormously since I started my miso regime.

Now eventually I could decide to create a wee miso factory in our basement, using the instructions provided in the book, a project that intrigues me. I guess I could try some of the recipes but it is easy enough to just substitute miso for salt, and bouillon cubes whenever possible. Even my kitten gets a drop of miso in the morning and he loves it - so much tastier than meat by-products!

This book brings out all the atmospheres of the 1970s and the smell of Japan all together. Pictures are very realistic and the description of the Miso recipes are beautiful and they are VAST. You really don't think that it was writen so long ago. It is a useful book both those who are new to Miso recipes and those who aren't.
